Tender and tasty

Brioche braid with Havanna dulce de leche with 70% chocolate. It is a recipe that, although it takes time, is easy and is super super delicious 😋❤️

Ingredients

    🚰65ml lukewarm water
    🧂1 pinch of salt
    🍬70g sugar
    🥄1tsp vanilla essence
    🍊Lemon and orange zest to taste
    🥣50g butter at room temperature
    🍫Caramel sauce Havanna with chocolate 70% to taste
Elaboration
    🍞Crumble the yeast into pieces and dissolve it in the warm water with two tablespoons of flour (of the 270g) and a tablespoon of sugar (of the 70g). Cover with film and let ferment, it will take about 20 min approx.
    🍞In the bowl of the mixer put the flour and the remaining sugar, the salt, the lemon/orange zest and the essence of vanilla. Mix with a spatula
    🍞Make a hole in the center, add the egg and the yeast dissolved in the water
    🍞Put the dough hook on and knead until the dough is elastic
    🍞Knead for a few minutes by hand, add the softened butter and knead until the dough is smooth
    🍞Let the dough rest in the fridge for 1 hour wrapped in film
    🍞Remove the dough from the fridge, roll out the dough, spread with dulce de leche with chocolate or Nutella, cut and shape into a braid
    🍞Put the dough in a previously oiled 24cm rectangular mold, cover with film and let it rest until it doubles its size. It takes 2 or 3 hours approx., depends on the ambient temperature

    🍞Paint with egg (I always use a yolk with a tablespoon of milk)
    🍞Bake at 165ºC 21min. (heat up and down without fan). Before removing the braid, click with a toothpick and check that it comes out dry
    🍞Remove from the oven, let cool, unmold and enjoy 😊😋

Note

    🌼To keep it tender longer, cover it well with plastic wrap
    🌼I use harimsa flour but you can use whatever strength flour you want
    🌼How to make the braid:
  • Roll out the dough and form a rectangle with a thickness of approx. 1cm.
  • Spread with caramel sauce
  • Roll up the dough
  • Make a cut along the roll of dough and braid
