Chocolate cake with a lot of chocolate 🍫😋😍🍫🥰🖤

If you like chocolate, you will love this cake, because it is a real chocolate pleasure. Chocolate cake filled with dark chocolate ganache cream and stracciatella type cream with dark chocolate shavings. Covered with black ganache cream and details with white chocolate ganache.

Here is the recipe for the sponge cake, filling and topping

Ingredients: Sponge cakes 🍫🍫🍫
    🥚3 eggs
    🍭250g of sugar
    🥄1tsp vanilla essence
    🍶140ml light olive or sunflower oil
    🥛120ml hot milk
    🚰120ml hot water
    🍫50g of pure cocoa powder
    🥣220g of plain flour or pastry flour
    🥄10g baking powder
    🥄3g baking soda
Before starting:
    🖤Preheat the oven to 165ºC
    🖤​Grease 3 18cm molds
Elaboration: Sponge cakes
    🍫Beat the eggs with the sugar until you get a creamy mixture
    🍫Add the oil, the vanilla essence and beat until well integrated
    🍫Add the milk and hot water (not boiling), mix with a spatula
    🍫Add previously sifted flour along with cocoa, baking powder and bicarbonate. Mix a little with the spatula and beat again for a couple of minutes at medium speed so that there are no lumps and everything is well integrated
    🍫Pour the mixture into the molds and bake at 165ºC for 25min. Check with a toothpick that it comes out dry before removing the cakes from the oven
    🍫Remove the cake from the oven and let it cool on a grill for about 20 min. before demoulding

    🍫Let cool well before filling

Ingredients: Dark chocolate ganache cream (For a layer of filling and to cover the cake)

    🍫200g of dark chocolate
    🍶400ml of whipping cream 38%FM
    🍶200ml of whipping cream 38%FM
Elaboration: Dark chocolate ganache cream
    🍫Chop the chocolate in a bowl
    🍫In a small saucepan, heat the 400ml of cream without letting it boil
    🍫Pour the cream into the bowl with the chocolate, stir until it dissolves well. Cover in cling-film and when it is cold, store in the refrigerator for 4 or 6 hours.

    🍫After the rest time, beat until stiff, add the 200ml of cream and beat until the cream is thick

    🍫You already have the cream for the filling layer and the cake covering
Ingredients: Mascarpone cream with dark chocolate shavings (For a layer of filling)

    🧀125g of mascarpone cheese
    🍶75ml of vegetable cream
    🍶50ml of whipping cream 38%FM
    🍬25g icing sugar
    🥄1tsp vanilla essence
    🍫25g dark chocolate shavings
Elaboration: Mascarpone cream with dark chocolate shavings 🍫
    🍦In a bowl, beat the cream, when it mounts a little add the icing sugar and vanilla
    🍦Add the mascarpone and beat
    🍦Add the chocolate shavings and beat until the cream looks thick

Ingredients: White chocolate ganache (For the drawings with the template)

    🍫70g white chocolate
    🍶100ml cream
Elaboration: White chocolate ganache
    🍫Chop the chocolate in a bowl
    🍫In a small saucepan, heat the 100ml of cream without letting it boil
    🍫Pour the cream into the bowl with the chocolate, stir until it dissolves well. Cover in cling-film and when it is cold, store in the refrigerator for 4 or 6 hours

    🚰500ml water
    🍬150g of sugar
    🥄Vanilla essence to taste
Elaboration: Syrup
    ✨Brown the sugar a little
    ✨Add the water being careful not to burn yourself
    ✨Add the essence of vanilla and let it boil
    ✨Remove from heat and let cool before using
Assembly of the cake:

Three-layer sponge cake, a layer of dark chocolate ganache cream and a layer of mascarpone cream with chocolate shavings

    ✨Cut the cakes in layers of 2 or 2.5cm thick

    ✨Moisten the cakes with the syrup to taste
    ✨Put on top of the first layer of black chocolate cream cake. I put 300g of cream

    ✨Cover the cake with the rest of the dark chocolate ganache cream

    ✨Refrigerate for an hour
    ✨Decorate the cake... with a template and the white chocolate ganache make the details on the sides of the cake. This is at your choice. I also decorated it with some praline chocolate truffles and white chocolate @nestlepostres, you can see the recipe for the truffles in my chocolate recipes
