Chocolate cake with lots of chocolate 🍫😋😍🍫🥰🖤
If you love chocolate, you’re going to love this cake, because it’s a true chocolate delight. Chocolate sponge cake filled with dark chocolate ganache cream and stracciatella-style cream with dark chocolate chips. Covered with dark chocolate ganache and finished with white chocolate ganache details.
Decoration: Praline chocolate truffles and white chocolate truffles (you can find the truffle recipe in my chocolate recipes)
Here is the recipe for the sponge cakes, filling, and topping
Ingredients: Sponge cakes 🍫🍫🍫
- 🥚3 eggs
- 🍭250g sugar
- 🥄1 tsp vanilla extract
- 🍶140ml mild olive oil or sunflower oil
- 🥛120ml hot milk
- 🚰120ml hot water
- 🍫50g pure cocoa powder
- 🥣220g 0000 flour or cake flour
- 🥄10g baking powder
- 🥄3g baking soda
Before starting
- 🖤Preheat the oven to 165ºC
- 🖤Grease 3 molds of 18cm
Elaboration: Sponge cakes
- 🍫Beat the eggs with the sugar until you get a creamy mixture
- 🍫Add the oil and vanilla extract and beat until well combined
- 🍫Add the milk and hot water (not boiling), mix with a spatula
- 🍫Add the previously sifted flour together with the cocoa, baking powder, and baking soda. Mix a little with the spatula and beat again for a couple of minutes at medium speed so there are no lumps and everything is well combined
- 🍫Pour the mixture into the molds and bake at 165ºC for 25 minutes. Check with a toothpick that it comes out clean before removing the sponge cakes from the oven
- 🍫Remove the sponge cakes from the oven and let them cool on a rack for about 20 minutes before unmolding

- 🍫Let cool completely before filling

Ingredients: Dark chocolate ganache cream (For one filling layer and to cover the cake)

- 🍫200g dark chocolate
- 🍶400ml whipping cream 38% fat
- 🍶200ml whipping cream 38% fat
Elaboration: Dark chocolate ganache cream
- 🍫Chop the chocolate into a bowl
- 🍫In a small saucepan, heat the 400ml of cream without letting it boil
- 🍫Pour the cream over the chocolate and stir until fully melted. Cover directly with plastic wrap and, once cold, store in the refrigerator for 4 to 6 hours

- 🍫After the resting time, whip until it thickens, add the remaining 200ml of cream and beat until the cream is dense

- 🍫Now you have the cream for the filling layer and the cake covering
Ingredients: Mascarpone cream with dark chocolate chips (For one filling layer)

- 🧀125g mascarpone cheese
- 🍶75ml vegetable whipping cream
- 🍶50ml whipping cream 38% fat
- 🍬25g powdered sugar
- 🥄1 tsp vanilla extract
- 🍫25g dark chocolate chips
Elaboration: Mascarpone cream with dark chocolate chips 🍫
- 🍦In a bowl, whip the creams; once they start to thicken, add the powdered sugar and vanilla
- 🍦Add the mascarpone and beat
- 🍦Add the chocolate chips and beat until the cream looks thick

Ingredients: White chocolate ganache (For the stencil designs)

- 🍫70g white chocolate
- 🍶100ml cream
Elaboration: White chocolate ganache
- 🍫Chop the chocolate into a bowl
- 🍫In a small saucepan, heat the 100ml of cream without letting it boil
- 🍫Pour the cream over the chocolate and stir until fully melted. Cover directly with plastic wrap and, once cold, store in the refrigerator for 4 to 6 hours

- 🍫After the resting time, whip until it thickens

Ingredients: Syrup
- 🚰500ml water
- 🍬150g sugar
- 🥄Vanilla extract to taste
Elaboration: Syrup
- ✨Lightly caramelize the sugar
- ✨Carefully add the water to avoid burns
- ✨Add the vanilla extract and let it boil
- ✨Add the vanilla extract and let it boil
Cake assembly
- Three-layer cake: sponge cake, a layer of dark chocolate ganache cream, and a layer of mascarpone cream with chocolate shavings
- ✨Cut the sponge cakes into layers 2 to 2.5cm thick

- ✨Moisten the sponge cakes with syrup to taste
- ✨Place dark chocolate cream on top of the first sponge layer. I used 300g of cream

- ✨Cover with the second sponge layer
- ✨Add the mascarpone cream. I used 300g

- ✨Place the third sponge layer

- ✨Cover the cake with the remaining dark chocolate ganache cream

- ✨Refrigerate for one hour
- ✨Decorate the cake… using a stencil and the white chocolate ganache to make designs on the sides of the cake. This is up to you. I also decorated it with praline chocolate truffles and white chocolate truffles; you can find the truffle recipe in my chocolate recipes

This pure chocolate cake is ideal for any occasion. It takes some time, but if you love chocolate, it will be worth it 😋🥰🍫❤️ I encourage you to try it!!!
