I'm sharing this delicious recipe for giant banana and chocolate cookies, filled with dulce de leche...

Ingredients (24cm mold)

  • 🍌250g mashed bananas
  • 🧈200g melted butter
  • 🍭150g brown sugar
  • 🥚1 egg (65g)
  • 🥄8g baking powder
  • 🥄2g baking soda
  • 🥄1 tsp vanilla essence
  • 🌾400g plain flour or baking flour (without raising agent)
  • 🧂A pinch of salt
  • 🍫100g chocolate chips
  • 🍯300g dulce de leche Pastry (mix 100g normal and 200g pastry)
Elaboration
  1. 🍌Mash the bananas with a fork and set aside.
  2. 🧈In a bowl, beat the melted butter with the sugar and vanilla until well combined.
  3. 🥚Add the egg and beat until the mixture thickens slightly.
  4. 🍌Add the mashed banana and mix.
  5. 🌾Add the flour, baking powder, baking soda, salt and chocolate chips and mix until the dough is well combined.
  6. 🥧Grease a mould and line the base with baking paper.
  7. 🥣Divide the dough into two equal parts and place one half on the base of the mould, forming a small rim on the sides. Then, add a layer of dulce de leche and cover with the other half of the dough.

  1. ❄️Store in the fridge and chill for 1 hour.
  2. ♨️Preheat the oven and bake at 170°C for 30 minutes.
  3. 💨Let it cool completely and unmold.
  4. 🍪Decorate to taste. I decorated it with chocolate, dulce de leche and banana.

Note

  • You can also make 12 individual cookies:
  • ✍️Make balls of dough of approximately 95g, break them in half with your hands, and in one of the halves make a small hole in the center and put a teaspoon of previously frozen dulce de leche (optional). Join the two halves and form balls well so that they are firm
  • ✍️Wrap the dough balls with cling film and store in the freezer for 30 minutes or 1 hour in the refrigerator. Bake at 170°C for 16min
  • ✍️If you don't like dulce de leche, you can use Nutella or chocolate 🤎
