Pumpkin 🎃 cupcakes with mascarpone cream. They are juicy, full of flavor, and terrifyingly delicious 😋🤗🎃
Here’s the recipe so you can have a spooky Halloween 💀🎃
Ingredients (12 cupcakes)

- 🥚3 eggs
- 🍭120g sugar
- 🌻110ml sunflower oil
- 🎃300g roasted pumpkin
- ☠️1 pinch of cinnamon
- 👻1 pinch of ginger
- 💀Vanilla extract to taste
- 🥣160g all-purpose flour
- 🥄10g baking powder
- 🥄4g baking soda
Elaboration
- 🔮Roast the pumpkin and mash it
- 🧙Beat the eggs with sugar until the mixture looks creamy
- 🔮Add the oil and beat until incorporated
- 🧙Add the pumpkin puree, mix with a spatula, and add cinnamon, ginger, and vanilla (amount to taste)
- 🔮Add the flour with the sifted baking powder and baking soda, mix until incorporated and smooth (if there are many lumps, beat for a couple of minutes)
- 🧙Pour the mixture into cupcake liners and bake at 170°C for 18 minutes (top and bottom heat). Before removing from oven, check with a toothpick that it comes out clean and dry


Ingredients: Multicolor Cream 💜🧡

- 🍶125ml plant-based cream
- 🍬40g powdered sugar
- 🥛250g mascarpone
- 🥄1 tsp vanilla extract
- 🧡Orange food coloring
- 💜Violet food coloring
Elaboration: Multicolor Cream
- 💀Whip the cream, when it thickens add the sugar and vanilla, continue whipping until fluffy
- 🖤Add the mascarpone and beat until the cream is thick
- 💀Divide the cream into two bowls and add coloring (as desired)

- 🎃Witch hats 🧙♀️, tombs 💀,… handmade with fondant
