Here is the recipe for this lemon cake 🍋 that is not only very fluffy but also delicious 😋 and easy to make 🤗. I hope you enjoy it and like it as much as I do 😋🍋🌼
🥧Preheat the oven to 180ºC and grease a 24 cm mold with butter.
🥧In a bowl beat the eggs with the sugar until you get a creamy mix.
🥧Add the oil, aroma or essence of lemon (optional), zest and lemon juice, and continue beating.
🥧Add little by little the flour previously sifted with the baking powder, while beating until everything is well integrated.
🥧Finally, add the milk and beat until there's a uniform mix left.
🥧Pour the cake mix into the mold and bake at 180ºC 35 minutes or until when you click the cake with a toothpick it comes out completely clean.
🥧Remove from the oven and let cool on a grid for 20 or 30 minutes and unmold.
🥧You can sprinkle with icing sugar, make a glaze or without anything it looks great.
Note
🌼The flour I use is self-rising flour (Argentina) but any cake flour will work.
🌼You can replace the oil with mild olive oil if you don't like sunflower oil.
🌼The aroma of lemon is optional, since the zest together with the natural lemon juice give it a very powerful and really delicious flavor. I put it on because the lemon flavor drives me crazy 😋🤪
