

// Lemon Cookies
Surprising Inside
Tender and juicy lemon cookies with white chocolate chunks 💛.
Here’s the recipe, simple and easy, so if you feel like it, you can try it 🍪💛
Ingredients (13 or 14 cookies of approx. 90g each)
- 🍪210g unsalted butter
- 🍪200g white sugar
- 🍪78g egg
- 🍪2 tsp lemon extract
- 🍪Zest and juice of 1 large lemon or 1.5 medium lemons
- 🍪420g 0000 or pastry flour
- 🍪12g baking powder
- 🍪5g baking soda
- 🍪240g chopped white chocolate Ivoire
Elaboration
- 🍋Beat the butter with the sugar until creamy
- 🍋Add the egg, extract, zest, and lemon juice, and continue beating
- 🍋Add the flour, baking powder, and baking soda, and beat until cookie dough forms
- 🍋Remove the dough from the mixer and add the chopped chocolate, knead with hands until the chocolate is incorporated and the dough is more compact
- 🍋Make dough balls of about 90g each. Roll well to make them firm (the dough is a bit soft, this is normal)
- 🍋Store the cookie balls wrapped in plastic wrap in the freezer for about 30 minutes or 1 hour in the fridge
- 🍋Preheat the oven to 170°C
- 🍋Take the cookies out of the freezer/fridge, remove the plastic wrap, and place them on a baking tray lined with parchment paper (I bake 4-5 cookies per batch)
- 🍋Bake the cookies for 14 minutes at 170°C (top and bottom heat)
- 🍋Once baked, let them cool on the tray for at least 10 minutes. Then transfer them with a spatula to a rack to finish cooling 🤗
Notes
- 💛The dough is a little soft, but don’t add more flour so the texture stays tender
- 💛To easily roll the cookies, grease your hands with butter
