Surprising inside

Tender and juicy lemon cookies with pieces of white chocolate @valrhonaes 💛. I leave you the recipe that has no complications so that if you dare you can try it 🍪💛

Ingredients (13 or 14 cookies of 90g approx.)
    🍪210g unsalted butter
    🍪200g white sugar
    🍪Zest and juice of 1 large lemon or a lemon and a half normal size
    🍪420g plain flour or pastry flour
    🍪5g baking soda
Elaboration
    🍋Beat butter with sugar until creamy
    🍋Add the egg, aroma, zest and lemon juice and continue beating
    🍋Add the flour, baking powder, baking soda and beat until the cookie dough forms
    🍋Remove the dough from the mixer and add the chopped chocolate, knead with your hands until the chocolate is integrated and the dough is more compact
    🍋Make dough balls of about 90g each. Roll well so that they are firm (this dough is a bit soft, it is normal)
    🍋Store the cookie balls wrapped in cling film in the freezer for about 30 minutes or 1 hour in the fridge
    🍋Preheat the oven to 170°C
    🍋Remove the cookies from the freezer/refrigerator, remove the film and place them on a baking tray with parchment paper. (I put 4-5 cookies per batch)
    🍋Bake the cookies for 14 minutes at 170°C (heat up and down)
    🍋Once baked, let them cool on the tray for at least 10 minutes. And pass them with a spatula to a grill so they finish cooling 🤗

Note

    💛The dough is a little soft, but don't add more flour so that its texture is tender
    💛To roll the cookies easily, grease your hands with butter
