Refreshing and fluffy

Easy, delicious and fluffy lemon lime pound cake topped with white chocolate lemon lime ganache. Decorated with lime/lemon zest and candied lime/lemon slices made by me ๐Ÿ˜‹๐Ÿ’š๐Ÿ’›โ€ฆ

As I have already told you, I love cakes and cookies, for me they are the perfect snack or breakfast ๐Ÿ˜‹๐Ÿ’›. I have a weakness for many things hahaha, but sponge cakes, cookies and brioche-type doughs... they lose me ๐Ÿ˜…โ˜บ๏ธ๐Ÿ˜‹. I leave you the recipe so you can cheer up and try it... ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ’š

Ingredients

    ๐Ÿฅš3 eggs
    ๐Ÿฅ›1 can of condensed milk @lalechera (370g)
    ๐Ÿถ180ml sunflower oil
    ๐Ÿ‹Zest and juice of 1 lemon (small)
    ๐Ÿ’šZest and juice of 2 limes
    ๐ŸŒพ200g plain flour or pastry flour
    ๐Ÿฅ„16g baking powder
    ๐Ÿฅ›100ml whole milk
Elaboration
    ๐Ÿ’šPreheat the oven to 165ยบC and grease a 22 cm mold
    ๐Ÿ’šIn a bowl, beat the eggs with the condensed milk until they are well integrated
    ๐Ÿ’šAdd the oil, beat for a couple of minutes
    ๐Ÿ’šAdd the zest and juices of limes and lemon. Continue beating for one minute and stop the mixer
    ๐Ÿ’šAdd the milk and mix with the mixer turned off or with a spatula until integrated
    ๐Ÿ’šAdd the flour previously sifted with the baking powder, mix with a spatula and then beat for a few minutes with the mixer so that there are no lumps and a uniform mixture remains
    ๐Ÿ’šPour the cake mixture into the mold and bake at 165ยบC for 45 minutes (before removing the cake from the oven, click with a toothpick to check that it comes out clean and dry)
    ๐Ÿ’šLet cool for 20min and unmold
    ๐Ÿ’šYou can sprinkle with icing sugar, make a glaze, without anything it also looks great. In my case, I put a layer of lemon-lime white chocolate ganache on it

If you want to make the ganache

Ingredients: Ganache to cover
    ๐Ÿถ60ml whipping cream 38%FC
    ๐Ÿ’šZest of half a lime
    ๐Ÿ‹Zest of half a lemon
    ๐Ÿฅ„1tsp of lemon aroma

Preparation: Ganache to cover
    ๐ŸซPut the chopped chocolate in a bowl
    ๐Ÿ’šAdd the lime/lemon zest
    ๐Ÿ’›Add 1 small teaspoon of lemon aroma (optional)
    ๐ŸถHeat the cream in the microwave (do not break a boil) and add it to the chocolate
    ๐ŸฅฃMix until the chocolate dissolves well
    ๐Ÿ’›Let cool before using to decorate the cake
Ingredients: Candied lemon and lime for decoration
    ๐Ÿ‹2 lemons
    ๐Ÿ’š2 limes
    ๐Ÿฌ250g sugar
    ๐Ÿšฐ150ml water
Preparation: Lemon and candied lime for decoration
    ๐Ÿ‹Put water with sugar in a pan and lead to fire. When the sugar dissolves add the lime and lemon slices
    ๐Ÿ‹Let cook until caramelized
    ๐Ÿ‹Put the slices on a grill to drain all night
    ๐Ÿ‹Store the slices in a container (I separate them from each other with parchment paper, I cut paper circles and thus prevent them from sticking)

Note

    ๐Ÿ“The candied lime/lemon is optional
    ๐Ÿ“You can replace the ganache with a lemon glaze (icing sugar and lemon juice)

Its lemon lime flavor is delicious. It's ideal for hot days, you keep it in the fridge, you take it out a few minutes before eating it and it's amazing ๐Ÿ˜‹๐Ÿ˜‹๐Ÿ’š
