Light and delicious

Here is the recipe for the cakes and the filling with which I made this delicious lactose-free cake 😋🥰. I made the jam from mango 🥭, but you can use another (raspberry, strawberry, berries, blueberries, etc).

Ingredients: 💛Lemon cakes (3 14cm molds)

    🍬220g of sugar
    🍶180ml mild olive oil
    🍋Zest and juice of 1 lemon
    🌾250g of plain flour or pastry flour
    🥄4g baking soda
Before starting
    🔥Preheat the oven to 165ºC
    🥧Grease 3 14cm molds
Elaboration: Sponge cakes
    🌾Beat the eggs with the sugar until you get a creamy mixture
    🌾Add the oil and beat until well blended
    🌾Add the lemon zest and juice and beat until everything is well integrated
    🌾Add the flour, baking soda and baking powder previously sifted, mix gently with a manual mixer
    🌾Finally add the milk and mix until well integrated
    🌾Pour the mixture into the molds and bake at 165ºC for 25/28 minutes, heat up and down. Check with a toothpick that it comes out dry before removing the cakes from the oven
    🌾Remove the cakes from the oven and let cool on a grill for about 20min. before demoulding

    🌾Let cool well before filling
Ingredients: 💜Lactose-free cream cheese (For filling)

    🧀450g lactose-free cream cheese
    🍬130g icing sugar
Elaboration: Lactose-free cream cheese
    🥣Beat the cream cheese with the icing sugar until it has a creamy consistency
    🥣Add the cream and beat until the mixture looks thick
    🥣The cream is ready
Ingredients: 💜Mango marmalade (For filling)
    🥭500g of mango pulp
    🍬60g sugar
    🍋Juice of 1 lemon
Elaboration: Mango marmalade
    🥭Put the chopped mango, sugar and lemon juice in a saucepan and cook until you get a thick jam so that it is easier to use as a filling
Ingredients: 💜Cream (To decorate)
    🍬40g icing sugar
    💜Violet dye
Elaboration: Cream
    🍶Whip the cream until it mounts a little
    🍶Add the icing sugar and beat until smooth
    🍶Put coloring. Before separating 2 or 3 tablespoons, in case we want to give degraded effects

Note

    👩🏻‍🍳For my cake I cut each cake 2.5-3 cm thick approx.

    👩🏻‍🍳I moistened the cakes with syrup, the amount is to your liking
    👩🏻‍🍳The amount of filling per layer is 180g of cream and 90g of jam
    👩🏻‍🍳I used the rest of the cream to cover the cake
    👩🏻‍🍳As you can see I made a bit of purple cream to decorate, but this is optional!
    👩🏻‍🍳The jam, you can put the flavor you like! I wanted to try this combination and it seemed really tasty and not because I made it ☺️! But I understand that not all of us like mangoes!!! 🤗🤗
