With a heart of cream

Lemon muffins with custard cream and poppy seeds 🧁🍋🌼

Juicy, spongy muffins with a creamy interior... they are delicious and with the crunchy touch of the crumble they are ideal 😋💛😍🍋🍋

Ingredients (7 large 🧁)

    🍬120g sugar
    🌻140g butter
    🥄Zest and juice of 1 large lemon (80ml)
    🥛125ml whole or semi milk
    🍶125ml whipping cream
    🌾260g of plain flour or pastry flour
    🥄1tsp poppy seeds (7g) or to taste (optional)
Elaboration
    🧁Preheat the oven to 170ºC and prepare a tray for muffins or cupcakes with the capsules, in my case I used 7 units.
    🧁Beat the butter, when it is creamy add the sugar and beat until it is integrated
    🧁Add the eggs. Beat until you get a creamy mixture
    🧁Add the lemon zest and juice. Mingle
    🧁Add the milk and cream and mix until combined
    🧁Add the flour along with the yeast and poppy seeds. Mix well and beat for a few minutes so that there are no lumps.
    🧁Pour less than half of the mixture into the capsules, fill with custard cream and finish pouring the mixture to cover the cream. Put a little crumble on top of each muffin and bake at 170ºC for approximately 25 minutes.
    🧁Let cool on a rack

    🥛250ml milk
    🥚2 yolks
    🍬60g sugar
    🌾25g cornstarch
    🥄1tsp lemon aroma
    🍶20g butter
Elaboration: Custard cream
    🌼In a saucepan, heat the milk with the vanilla essence
    💛In a bowl, beat the yolks, sugar, cornstarch and 2 tablespoons of the milk that is being cooked. Beat well so that there is a homogeneous mixture without lumps.
    🌼When the milk is about to boil, remove from the heat, strain and pour into the yolk mixture. Mix well
    💛Put the mixture in a saucepan and cook over medium-high heat, stirring constantly until the cream thickens and starts to boil.
    🌼Remove from the heat, add the butter, mix well and transfer to a bowl.

    💛Cover in cling-film so that it does not form a crust
    🌼Let cool completely before using

    🌾125g flour
    🍬75g sugar
    🍶75g butter
Elaboration: Crumble
    🌾In a bowl, beat the butter at room temperature, the sugar, the flour and rub with your hands. There will be a sandy mixture

It is a really delicious recipe, the muffins are spongy and last for several days in the fridge.

The custard cream and crumble are optional, even if you don't add these options, they are just as delicious... you can add blueberries, which are also incredible 😋🍋
