Delicious and fluffy

Panettone is a Christmas dessert typical of Italy, made with a brioche-type dough, candied fruits and raisins. But I made this recipe with chocolate chips instead of candied fruits and raisins. It is a recipe that, although it takes time, is quite simple to make. I hope you dare and try it, I assure you that it tastes delicious!!

Ingredients

    🌟140ml whole milk
    🌟35g fresh yeast
    🌟120g sugar
    🌟120g butter (softened)
    🌟500g strong flour
    🌟Vanilla essence to taste
    🌟Orange blossom to taste (optional)
    🌟Panettone aroma to taste
    🌟Lemon zest 🍋 to taste
    🌟Orange zest 🍊 to taste
    🌟2 500g panettone paper molds
Elaboration
    🎄Heat the milk until it is lukewarm
    🎄Crumble the yeast into pieces and dissolve it in the milk with two tablespoons of flour (of the total 500g). Cover with film and let rest for 1 hour
    🎄In a bowl put the mixture of yeast, sugar and eggs. Mix with a hand mixer
    🎄Add the soft butter and mix (it should not be liquid or hot) I heated it for 30 seconds in the microwave, let it rest and stirred with a fork. it was creamy
    🎄Add the aromas to taste (vanilla, orange blossom, orange, lemon...)
    🎄Add the flour and mix
    🎄Pass the dough to the bowl of the mixer with the dough hook and knead until the dough is elastic
    🎄Remove the dough from the bowl and knead a little with your hands (grease your hands and the counter with a little sunflower oil or butter to make it easier to manipulate the dough)
    🎄Stretch the dough and put the chocolate nuggets. Knead until the nuggets are adhered
    🎄Divide the dough into two bowls and let rest for an hour in a warm place
    🎄Pour the dough into the panettone molds and let them rest until they double their size (it takes 2 or 2.5 hours approx.) in a warm place
    🎄Make two cross-shaped cuts on the top with a sharp blade and paint with egg (I use a yolk with a tablespoon of milk)

    🎄Bake at 165ºC 26min. (heat up and down without fan). Before removing the panettones, prick with a toothpick and check that it comes out dry
    🎄After 15 minutes of baking time, I cover them with aluminum foil, so they don't brown too much (I don't like them very golden, that's to everyone's taste)

    🎄Remove from the oven and put to cool suspended upside down (I suspended them with two skewer sticks resting on some wooden drawers that I used as pillars)
    🎄When they are warm or cold you can enjoy them now!!!

Note

    💫To preserve them, cover them well with transparent film
    💫If you use panettone scent, I recommend you be careful with the dose you use. It is strong and you can pass! I put a teaspoon of vanilla essence, a teaspoon of orange blossom water, 3 drops of panettone aroma and a little lemon and orange zest
    💫Eggs are size M
    💫The flour I always use harimsa
