Moist and fluffy

Taking advantage of the fact that I made a lot of roasted pumpkin, I share with you this delicious recipe for Pumpkin Cake! 🎃.

It is moist, fluffy and easy to prepare 🍂🍁. If you like pumpkin you will love the flavor of the cake 😋😍

Ingredients (24cm Savarin mold)

  • 🥚3 eggs @pazodevilane
  • 🍭120g sugar
  • 🫒110ml mild olive oil
  • 🎃300g roasted pumpkin puree
  • 🤎1 pinch of cinnamon
  • 🫚1 pinch of ginger
  • 🤎1 pinch of nutmeg
  • 🌼Vanilla essence to taste
  • 🥣160g pastry flour
  • 🥄10g baking powder @royal_postres
  • 🥄4g baking soda
Elaboration
  1. 🧡Roast the pumpkin, drain well and mash until you obtain a puree
  2. 🎃Beat the eggs with the sugar until the mixture looks creamy
  3. 🧡Add the oil and beat until combined
  4. 🎃Add the pumpkin puree, vanilla and mix with the hand blender.
  5. 🧡Add cinnamon, nutmeg and ginger (amount to taste)
  6. 🎃Add the flour along with the previously sifted baking powder and baking soda, mix until it is integrated and there are no lumps (if there are many lumps, beat for a couple of minutes)

  1. 🧡Pour the mixture into the previously greased mold and bake at 170°C for 28 minutes (heat up and down), before removing from the oven, prick with a toothpick and check that it comes out clean and dry.
