Soft and fluffy

Very fluffy vegan cake 😋🍰! vegan vanilla cake, stuffed with vegan mascarpone cheese cream and homemade strawberry jam 🍰🍓❤️!! For this cake I used a simple decoration, strawberries and natural flowers🍓🌸 as we are a few days away from Valentine's Day I think it is ideal ❤️🌸🍓🥰❤️

It is a very light cake with a delicious flavor! I assure you that if I didn't tell you that it's vegan, you wouldn't guess it 😊☺️🥰❤️🍓 Its flavor is as original as the classic one 😋❤️

Ingredients: Sponge cakes (3 18cm molds)
    🚰100ml water
    🍶100ml mild olive oil
    🥄2tsps vanilla essence
    🥄1tbsp apple or white vinegar
    🍬160g sugar
    🥣260g cake flour
    🥄4g baking soda
Elaboration: Sponge cakes
    🌸In a bowl put all the ingredients. Mix and beat until well combined
    🍓Pour the mixture in equal parts into the three previously greased molds with vegan butter or vegetable oil
    🌸Bake at 170ºC for 15 min heat up and down. Check with a toothpick that it comes out dry before removing the cakes from the oven
    🍓Let cool on a grill about 20 min. before demoulding
    🌸Let cool completely before filling
Ingredients: Vegan cream cheese (For filling)
    🍰250g vegan mascarpone
    🍰400ml vegetable cream
    🍰80g icing sugar
    🍰2tsps vanilla essence
    🍰Homemade strawberry jam to taste
    🍰Natural strawberries to decorate
Elaboration: Vegan cream cheese
    🍓Beat the vegan mascarpone, add the icing sugar and vanilla. Beat until well integrated
    🍓Add the vegetable cream and beat until you see a dense cream
    🍓Cream ready to assemble the cake
Assembly of the cake:

3-layer sponge cake, two layers of mascarpone cream and strawberry jam

    👩🏻‍🍳Moisten the sponge cakes a little with syrup (70g of sugar + 250ml water + 1 small teaspoon of vanilla. Bring to a boil and let cool well before using!)
    👩🏻‍🍳Put the layers of cream: Cake - 300g cream - Jam to taste - Cake - 300g cream - Jam to taste - Cake
    👩🏻‍🍳Decorate the cake... this is your choice. I decorated it with strawberries, raspberries and natural flowers

    ✏️I moistened the cakes because honestly I like cakes a little juicy, but this is to taste
    ✏️I used strawberries, raspberries and flowers for decoration because it is the most traditional in this type of cake but you can use what you like best 🤗
    ✏️I made strawberry jam, but you can make the flavor you want or you can also buy the jam already made ☺️
