

// Vegan Victoria Sponge Cake
Soft and fluffy
Very fluffy vegan cake 😋🍰! Vegan vanilla sponge, filled with vegan mascarpone cheese cream and homemade strawberry jam 🍰🍓❤️!! For this cake I used a simple decoration, strawberries and natural flowers🍓🌸 since Valentine's Day is coming up I think it's perfect ❤️🌸🍓🥰❤️
It's a very light cake with a delicious flavor!! I assure you that if I didn't tell you it's vegan, you wouldn't guess it 😊☺️🥰❤️🍓 Its taste is as original as the classic one 😋❤️
Ingredients: Sponge cakes (3 molds 18cm)
- 🥛120ml light soy milk
- 🚰100ml water
- 🍶100ml mild olive oil
- 🥄2 tsp vanilla essence
- 🥄1 tbsp apple or white vinegar
- 🍬160g sugar
- 🥣260g flour for sponge cakes
- 🥄8g baking powder
- 🥄4g bicarbonate
Elaboration: Sponge Cakes
- 🌸Put all ingredients in a bowl. Mix and beat until well combined
- 🍓Divide the mixture equally into the three molds previously greased with vegan butter or vegetable oil
- 🌸Bake at 170ºC for 15min, top and bottom heat. Check with a toothpick that it comes out dry before removing the sponges from the oven
- 🍓Cool on a rack for about 20min before unmolding
- 🌸Let cool completely before filling
Ingredients: Vegan Cheese Cream (for filling)
- 🍰250g vegan mascarpone
- 🍰400ml plant-based cream
- 🍰80g icing sugar
- 🍰2 tsp vanilla essence
- 🍰Homemade strawberry jam to taste
- 🍰Fresh strawberries for decoration
Elaboration: Vegan Cheese Cream
- 🍓Beat the vegan mascarpone, add the icing sugar and vanilla. Beat until well combined
- 🍓Add the plant-based cream and beat until a dense cream forms
- 🍓Cream ready to assemble the cake
Cake Assembly
- 3-layer cake with sponge, two layers of mascarpone cream and strawberry jam
- 👩🏻🍳Slightly moisten the sponges with syrup (70g sugar + 250ml water + 1 small tsp vanilla. Bring to a boil and let cool well before using!)
- 👩🏻🍳Layer the cream: Sponge - 300g cream - Jam to taste - Sponge - 300g cream - Jam to taste - Sponge
- 👩🏻🍳Decorate the cake... this is up to you. I decorated it with strawberries, raspberries, and natural flowers

Notes
- ✏️I moistened the sponges because I honestly like cakes a bit juicy, but this is to taste
- ✏️For decoration I used strawberries, raspberries, and flowers because it’s the most traditional for this type of cake, but you can use whatever you like 🤗
- ✏️I made strawberry jam, but you can make it with any flavor you want or buy ready-made jam ☺️
