I'm still in Christmas recipe mode 🎄. I've been thinking about a Christmas log for a long time, and I finally did it 😍❤️... It's a recipe that takes time but it's easy to make and the truth is that the result is worth it afterwards 😋❤️❤️. I leave you the recipe step by step so that if you dare you can try it ☺️☺️🤗❤️

Ingredients: Vanilla and chocolate sponge cake base

    🎄80g of sugar
    🎄80g of cake flour
    🎄1tsp vanilla essence
    🎄1tsp of pure cocoa powder
Ingredients: 70% chocolate ganache cream (trunk padding and covering)

    🍫340ml of cream 38%FC
    🍫150ml of 38%FC cream (to whip together with the ganache)

    🎄Separate the yolks from the whites
    🎄In a bowl, beat the yolks with half the sugar and vanilla until it looks creamy. In another bowl, beat the egg whites until stiff

    🎄Little by little mix the whites with the mixture of the yolks
    🎄Add the flour little by little and mix with enveloping movements with a spatula until well integrated

    🎄Separate 100g from the total mixture and add 1tsp of cocoa powder

    🎄Pour the vanilla mixture on a flat plate previously greased with butter and then the chocolate mixture, making drawings as in the photo or as you like

    🎄Bake at 170 °C heat up and down for 9 minutes

    🎄Take the cake out of the oven, carefully dismold on baking paper and roll to shape it into a trunk. Let it rest until it cools down (I do it the day before assembling the trunk. In this case, cover it with transparent film)

Elaboration: 70% chocolate ganache cream 👩🏻‍🍳👨🏻‍🍳
    🍫Chop the chocolate in a bowl
    🍫In a saucepan, heat the 340ml of cream and remove before it starts to boil
    🍫Pour the hot cream into the bowl with the chocolate and mix well until the chocolate dissolves

    🍫Cover in cling-film, let cool and store in the fridge for at least 6 hours before riding (I do it the day before)

    🍫Beat the ganache and when it mounts a little add little by little the 150 ml of cream. Beat well until the mixture is thick

    🍫Chocolate cream ready to use in the filling and trunk coverage
Assembly of the yule log 🎄
    ❤️Unroll and stretch the cake base
    ❤️Moisten the cake with a little syrup (35g sugar + 125ml of water + vanilla essence)
    ❤️Spread the cake base with the chocolate ganache (I put a 350g layer on it)

    ❤️Roll up and cover with the rest of the ganache using a piping bag to shape the trunk into a crust)

    ❤️Decorate (this is your choice) I used icing sugar, green sponge cake crumbs to imitate the moss and raspberries
